Stir fried vegetables

I tried this for the first time yesterday.
Got a mixed vegetables package that was labelled specifically for stir frying. Surprisingly simple to make:

Stick some tomato puree in there
cook lightly with extra-virgin olive oil
some mirch
ginger for that lovely stingy flavour :D

I loved the way it tastes, now I don't dread my 2 no-carb days/week :wah:

I will try replacing the tomato puree with lots of fresh tomatoes instead next time. I'm trying to stay away from anything that comes in a can, they generally tend to contain too lots of salt. One big mistake I made was I added too much oil in the beginning. I'm looking it the bowl right now and boy there is a lot of oil at the bottom :lols: Now I have to go for a run tonight.

Note to self: You are not skilled as your mom so measure stuff before dumping it in the pan, do not even try to dump it straight out of its original packaging

Any suggestions to improve the taste and/or nutritional value are more than welcome :)
